BALSAMIC GLAZED SALMON WITH ROASTED BRUSSELS SPROUTS & SWEET POTATOES

Ingredients:
- 4 salmon fillets
- 1/4 cup balsamic glaze
- 2 tbsp olive oil
- 1 lb (450g) Brussel sprouts, halved
- 2 medium sweet potatoes, diced
- Salt and pepper to taste
Method:
- Preheat the oven to 200°C/390°F (or 180°C/350°F if using a fan-forced oven). Line a large baking tray with parchment paper or lightly grease it with olive oil for easier cleanup.
- Prepare the vegetables: Rinse and trim the ends off the Brussels sprouts, then cut them in half. Peel the sweet potatoes and dice them into bite-sized cubes (about 1-inch pieces for even cooking). Place the Brussels sprouts and sweet potatoes in a large mixing bowl.
- Make the glaze mixture: In a small bowl, whisk together the balsamic glaze and olive oil. Season with salt and pepper to taste. Pour about half of this mixture over the vegetables and toss to coat evenly.
- Roast the vegetables: Spread the coated vegetables in a single layer on the prepared baking tray. Roast in the oven for 10 minutes to give them a head start, as they take slightly longer to cook than the salmon.
- Prepare the salmon: While the vegetables are roasting, pat the salmon fillets dry with a paper towel. Brush the remaining balsamic glaze mixture evenly over the top and sides of each fillet.
- Add salmon to the tray: After the vegetables have roasted for 10 minutes, remove the tray from the oven and make space in the center (or sides) for the salmon fillets. Place the salmon directly on the tray, skin side down if it has skin.
- Roast everything together: Return the tray to the oven and roast for another 15 minutes, or until the salmon is cooked through (internal temp of 125–130°F / 52–54°C) and flakes easily with a fork. The vegetables should be tender and caramelized at the edges.
- Plate the salmon with a generous portion of Brussels sprouts and sweet potatoes. Optionally, drizzle with a bit more balsamic glaze or a squeeze of lemon juice for added brightness and enjoy!
