CHOCOLATE LOVER'S AVOCADO BROWNIES

If you're a chocolate lover, these brownies are about to become a staple. Rich, fudgy, and packed with deep chocolate flavour, they're the perfect balance of indulgence and nourishment. 

The avocado creates an incredibly moist texture while adding healthy fats, and the combination of cocoa, dark chocolate, and maple syrup delivers that classic brownie experience everyone loves. Perfect for when you're craving something sweet and chocolatey without the sugar crash. Think: decadent, gooey, and impossible to stop at just one.

Servings: 16 brownies

Ingredients:

-  2 ripe avocados
-  2 eggs
-  1/2 cup pure maple syrup
-  1 tsp vanilla extract
-  1/2 cup cocoa powder
-  1 cup almond flour
-  1/2 tsp baking soda
-  1/4 tsp sea salt
-  1/3 cup dark chocolate chips or chunks

Optional: flaky sea salt for topping

Method:

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch (20cm x 20cm) baking dish with baking paper or lightly grease it.
  2. Add the avocados, eggs, maple syrup, and vanilla extract to a food processor or high-speed blender. Blend until completely smooth and creamy.
  3. Add the cocoa powder, almond flour, baking soda, and sea salt. Blend again until a thick brownie batter forms.
  4. Fold through the dark chocolate chips or chunks, reserving a small handful for the top.
  5. Pour the batter into the prepared baking dish and spread evenly with a spatula. Sprinkle the remaining chocolate over the top and add a pinch of flaky sea salt if using.
  6. Bake for 22–25 minutes, or until the edges are set and the centre is just slightly soft. Be careful not to overbake—you want them fudgy.
  7. Allow the brownies to cool completely in the pan before slicing. For extra fudgy brownies, place them in the fridge for 30–60 minutes before serving.

Notes:

  • These brownies are even better the next day once they've chilled and set.
  • For an extra indulgent version, serve with coconut yoghurt or a dollop of whipped coconut cream.
  • Store in an airtight container in the fridge for up to 5 days.
  • If you're dairy-free, choose a good-quality dairy-free dark chocolate.
