GRILLED SHRIMP & AVOCADO SALAD WITH CITRUS VINAIGRETTE RECIPE

Ingredients:
- 500g shrimp, peeled and deveined
- 2 avocados, sliced
- Mixed salad greens
- 1 orange, segmented
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tsp honey
- Salt and pepper to taste
Method:
- Prepare the shrimp: Pat the shrimp dry and season lightly with sea salt and pepper. Heat a grill pan or BBQ to medium-high heat. Grill the shrimp for 2–3 minutes per side, or until they turn opaque and have a light char. Set aside to cool slightly.
- Make the citrus vinaigrette: In a small bowl or jar, whisk together the olive oil, lime juice, honey, salt, and pepper. Taste and adjust as needed. (Tip: Add a little orange zest for extra zing.)
- Assemble the salad: On a large platter or individual bowls, layer the mixed salad greens, avocado slices, and orange segments. Top with the warm grilled shrimp.
- Dress and serve: Drizzle the citrus vinaigrette over the top just before serving. Finish with a crack of fresh pepper and an optional sprinkle of toasted seeds or microgreens if you like
