LAZY GIRL LUNCH: Hot Honey Chicken Crunch Bowl

Crispy, sticky hot-honey chicken piled over rice with crunchy slaw, avocado and a creamy lime drizzle.

Why you’ll love it: Sweet, spicy, creamy and crunchy with very little actual cooking. You’re getting approximately 40g+ protein per serving, plus vegetables, satisfying carbs and plenty of texture, making this a proper lunch rather than another sad desk salad.

Ingredients:

-  150 g (0.33 lb) chicken breast, cut into bite-sized pieces
-  1 tsp extra-virgin olive oil
-  ½ tsp smoked paprika
-  ½ tsp garlic powder
-  Pinch of sea salt
-  125 g (0.28 lb) pre-cooked rice
-  1½ cups plain pre-shredded slaw, without dressing
-  ¼ avocado, sliced
-  1 tbsp chopped coriander/cilantro, optional

For the hot honey (either use hot honey off the shelf or…):
-  2 tsp honey
-  1–2 tsp hot sauce, depending on how spicy you like it

For the creamy lime drizzle:
-  2 tbsp Greek yoghurt/yogurt
-  Juice of ½ lime
-  Pinch of sea salt

Method:

1. Toss the chicken with olive oil, paprika, garlic powder and salt.
2. Air fry at 200°C/390°F for 8–10 minutes, tossing halfway through, until cooked through and lightly golden.
3. Stir together the honey and hot sauce, then toss through the hot chicken.
4. Heat the rice and add it to a bowl with the plain shredded slaw and avocado.
5. Mix together the yoghurt/yogurt, lime juice and salt. Add the chicken to the bowl, drizzle over the lime yoghurt/yogurt and finish with coriander/cilantro if using.

Extra notes:
For the ultimate Lazy Girl version, use leftover or rotisserie chicken and warm it through with the hot honey mixture. Pre-cooked microwave rice and pre-bagged slaw are absolutely encouraged here. Just skip slaw kits that already contain dressing.
