MATCHA COCONUT BLISS BALLS

INGREDIENTS:
- 1 cup almond flour
- 1/4 cup coconut butter, softened
- 2 tablespoons honey
- 1 teaspoon matcha powder
- Shredded coconut for rolling
METHOD:
- In a medium mixing bowl, combine the almond flour, softened coconut butter, honey, and matcha powder. Mix everything together using a spoon or spatula until a thick, sticky dough forms. If the coconut butter is too firm, you can gently warm it in the microwave or over a double boiler until soft but not hot, which will help everything blend smoothly.
- Once the dough is well combined, scoop out small portions—about a tablespoon each—and roll them between your palms to form bite-sized balls. If the dough feels too sticky to roll, lightly dampen your hands or chill the mixture for a few minutes before shaping.
- Pour some shredded coconut into a shallow dish or plate. Roll each ball in the shredded coconut until it is evenly and generously coated on all sides. This not only adds flavor and texture but also helps prevent them from sticking together.
- Place the coated bliss balls onto a plate or small tray, spacing them slightly apart. Transfer them to the refrigerator and chill for at least 30 minutes to allow them to firm up and hold their shape.
- Once chilled, your matcha coconut bliss balls are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to one week. They also freeze well and make a great grab-and-go snack or afternoon pick-me-up.
