PALEO ORANGE CHOCOLATE CAKE RECIPE

Ingredients
:

- 2 cups almond flour
- 4 eggs
- 1/2 cup coconut oil, melted
- Zest of 1 orange
- 1/4 cup dark chocolate chunks


Method:

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8-inch round cake pan (or line it with parchment paper for easy removal).
  2. In a large mixing bowl, whisk together the eggs until smooth. Add in the melted coconut oil and orange zest, whisking until incorporated. Stir in the almond flour gradually until the batter is smooth and thick (no lumps).
  3. Gently fold the dark chocolate chunks into the batter with a spatula, distributing them evenly. Be careful not to over-mix so the chocolate stays chunky.
  4. Pour the batter into the prepared cake pan and spread it evenly with a spatula. Bake in the preheated oven for 28–32 minutes, or until a toothpick inserted in the center comes out mostly clean (a few melted chocolate smudges are fine).
  5. Remove from the oven and allow the cake to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing. This helps the cake set and prevents it from crumbling.
  6. Slice into 8 wedges. Optional: garnish with a dusting of extra orange zest or a drizzle of melted dark chocolate before serving.
