Ingredients:
- 2 cups almond flour
- 4 eggs
- 1/2 cup coconut oil, melted
- Zest of 1 orange
- 1/4 cup dark chocolate chunks
Method:
- Preheat your oven to 350°F (175°C) and lightly grease or line an 8-inch round cake pan with baking paper to prevent sticking.
- In a medium mixing bowl, combine the almond flour, eggs, and melted coconut oil. Stir until the mixture is smooth and well incorporated, with no dry pockets remaining. The batter should be thick but easy to mix.
- Add in the orange zest and gently fold it through. This is what gives the cake its fresh, citrusy lift and balances the richness of the almond flour and chocolate.
- Fold in the dark chocolate chunks, distributing them evenly throughout the batter so you get a little bit in every bite.
- Pour the mixture into your prepared cake pan and smooth out the top with a spatula so it bakes evenly.
- Place in the oven and bake for around 30 minutes, or until the top is lightly golden and a toothpick inserted into the centre comes out clean.
- Remove from the oven and allow the cake to cool in the pan for at least 10–15 minutes before transferring to a wire rack. This helps it set properly and makes slicing easier.
- Slice into 8 pieces and serve as is, or with a dollop of coconut yoghurt or a sprinkle of extra orange zest on top for a little something extra.
